This. This was the most delectable dessert I have had in some time. When Chef Gerard was making this tart, he mentioned that it was never a big seller, because frankly, who will order plums when they can get chocolate instead? I’ll tell you who - ME! I have now vowed to go for fruit any time I see it on a menu, especially if chocolate is the main comeptition. I can’t guarantee it will be consistent, but I will make a concerted effort for sure.
For the Tart Dough
Ingredients:
- 1.5 cups all purpose flour
- 1 tsp kosher salt
- 1 tsp sugar
- 1 stick/4 oz. cold butter, cut into small cubes
- 1/3 - 1/2 cup cold water
- 1/2 cup sliced almonds
- 1 egg
Directions:
In a food processor, combine all dry ingredients. Add butter in small chunks. Pulse blend until the butter is in small, pea-sized pieces. Slowly add cold water and pulse until the dough just comes together in a large ball. Shape in a ball, and flatten into a disk. Wrap the dough in plastic and chill until firm, about 1 hour. When ready to use, divide the dough into 4 equal portions. Shape each portion into a ball and flatten into a disk. Keep the dough that you’re not using refrigerated between use.
For the Filling
Ingredients:
- 2 cups diced plums
- 1/2 cup sugar
- 1/2 cup small dice cold butter
- 1/8 cup all purpose flour
Directions:
Toss all ingredients togegther. Lay all 4 round disks on a lightly oiled cookie sheet. Top with the fruit mixture. Carefully fold sides of dough up and toward the center, overlapping as you go. When you are finished, you should have a small hole in the center. Brush pastry with egg and sprinkle sliced almonds and sugar over the tart. Bake at 375 degrees F about 20-25 minutes or until folden brown. Serve warm with ice cream.

Aug 9th, 2009I always go for the fruit…and we need to make this for Kendall’s “re-do of her first birthday”. Since we were traveling and I didn’t get to do what I really wanted…so yeah we’re making plum tart!
