Porcini Crusted Ribeye with Gorgonzola Butter

W and I have had an incredibly eventful few weeks. Having just returned from nearly 2 weeks in Sardinia and Capri, for some reason, I haven't felt much like cooking, and quite truthfully, we weren't in the mood to eat so much of the rich food we gobbled up in Italy. I will make an attempt to cover Sardinia and Capri in another post, but a stroke of inspiration came last night and I wanted to share this unbelievably delicious meal that we grilled in an attempt to create a dinner to live up to our favourite bottle of wine; Alexander Valley Silver Oak Cabernet. Those of you who know me, know that I hoarde this stuff. But, last night felt like a cause for celebration, so we cracked that bad boy open and enjoyed the heck out of it. As for the ribeye, our butcher found an unbelievably well-marbled boneless slab of meat that I instantly fell for. The porcini dust made for an amazingly unctuous flavour that just melted in our mouths, and with our first 2 ears of corn from our garden (which were still a bit too young, but tasted FAB anyhow), I do believe we created a dish worthy of a little Silver Oak. Sweet Potato and Carrot Mash

sweetpotatoandcarrotmash  Why is it that orange food is almost always the most delicious?  Oranges, sweet potatoes, carrots - they're all so good for you!  The citrus is laden with Vitamin C, the carrots and sweet potatoes are loaded with keratin.   I made this dish to complement the Cranberry Orange Sauce I made for the Pork Chops I pan fried last night.  The recipe I've written makes about enough for 3-4 people, depending on how hungry you are, so if you have more people to feed (or just hungrier people), double, or even triple the recipe accordingly.  :) ... Maple-Glazed Sweet Potato Casserole

Let's face it - sweet potato casserole is dessert masquerading as a Thanksgiving side dish. The sweetness of the topping varies from one home cook to the next, but my husband is a huge fan of marshmallows atop a creamy sweet potato puree. For this recipe, I used my homemade vanilla extract (which I promise I will get to in an upcoming post), some cinnamon and nutmeg, and butter and cream. Earlier this month (8 days ago), I made Butter Roasted “Engagement” Chicken and had already started craving it again. I'd mentioned I wanted to roast another bird, and a friend said "Good grief, Lauren! You're already married - why do you keep making Engagement Chicken?" So, I found a recipe in this month's Bon Appetit magazine, and HAD to try it before Thanksgiving, preferably via a stuffed bird. Autumn Celebration Soup with Sweet Potatoes, Chicken Sausage, and Cannellini Beans

Yesterday was a gym day (legs, if you're keeping track :)), and neither my husband nor I wanted to walk all the way across the UTD campus in 65 degree wet, rainy weather, so we decided to do our workout at home. An hour and distinct amounts of pain later, I decided to focus on making dinner. Something quick, with minimal prep time (and less time on my feet), and using what we still had on hand since we'd been on vacation in California last week. So, we still had a good sweet potato, an onion, and I had some chicken sausage (please don't lambast me :)) in the freezer and threw this soup together in 30 minutes. It reminded me of autumn . . .
