Pumpkin Ale Pork Chili

So, it's finally starting to feel like Fall around here, and with the slowly changing leaves (very slowly, because Dallas has been hovering in the mid-70s this week), it's starting to look a bit like it, too. So, when my friend Miah posted this recipe for a pork chili simmered in pumpkin ale with chocolate, pumpkin, and spices, I thought "What on Earth? That sounds really odd." And my next immediate thought was ". . . but Miah wouldn't steer me wrong. . ." And he absolutely didn't. The combination of flavors this chili produced were nearly addicting. It's a bit on the spicy side (so, I've been told; my sensitivity to spice has been reduced drastically in recent years) so it may be "Holy crap, my tongue! It burns!" spicy to those of you who haven't been challenged to eat raw peppers as of late. Also, while the garnish may not look exceedingly appetizing (and as a friend pointed out, a bit like melted Velveeta), it's a really uplifting flavor and is delicious mixed in with the very complex sweet and spicy chili. Chicken Peanut Stew

Looking back through my past (most recent) posts, it's clear I need to make some apologies to you, dear Reader. Or excuses. Whatever you really want to call them, I haven't been adding content at a pace I'm happy with, so I wanted to make sure I submitted something before we made it through October with nary a new recipe. Mexican Pork Carnitas Lasagna

If you're like me, you plan to cook for only 2 people, maybe 3 or 4, but end up with enough leftovers to feed an army. I'm constantly tossing out expired food, and when I have an opportunity to reuse leftovers without getting bored of eating the same thing for 3 consecutive nights, I grab it. This casserole was a great way to use up my leftover taco fixings from my Pork Carnitas Tacos, and the cheese from my Queso Fundido. Queso Fundido

Living in Texas has it's perks and it's pitfalls. Mexican food eateries abound, and queso in local restaurants is about the best I've ever had. That's also a pitfall. Delicious, gooey, cheesy, spicy dip? Sign. Me. Up. So, for a recent gathering with my family, I made some Queso to go along with the Pork Carnitas Tacos I made this past weekend. Pork Carnitas Tacos

I love tacos. Especially slow-cooked pork shoulder braised in a delicious beer and loads of garlic. Today was the weekly Sunday dinner with my sister, her husband, and my neice. I wanted to make something that had a bit of preparation at the outset, but not a terrible amount to do once my guests were here. This is a great entertaining dish - just throw it in the oven, and forget it for about 3 hours. Served with Weston's Guacamole and some caramalized onions, cilantro, and some queso fresco, this is a delicious meal, and you should have plenty of leftovers! Continue Reading
