Corn & Chile Strata with Mexican Chorizo

For Christmas this year, my lovely sister Leah gave me a wonderful Williams-Sonoma cookbook full of recipes for the thing I love most in the world; brunch! Paging through page after page of beautifully shot photos, I finally settled on a recipe for a corn & chile strata with chorizo. This is an extremely homey dish, and after refrigerating overnight, I absolutely could not wait to get this in the oven the next morning. Baked Brie with Chopped Dates

I started looking through the Starters/Appetizers recipe of my blog and realized "Sheeesh, for as much entertaining as I do, I sure don't have a lot of quick and easy appetizers on the site . . ." Sweet and salty inspiration then struck us; W and I decided to wrap some brie and some sort of fruit in some puff pastry, bake it, and call it a day. But then the question came to us; Which fruit should we use? There's the ever popular preserves option, but we don't keep a lot of preserves handy in the fridge, so that was out. I thought, for a moment, about going savory with some sun-dried tomatoes as an excuse to use the last of our soon-to-be-dying basil due to the impending winter. But, ultimately, we went with chopped dates since they were in our pantry and I had no impending plans for them. The possibilities are endless here, so go nuts! Continue Reading

Porcini Crusted Ribeye with Gorgonzola Butter

W and I have had an incredibly eventful few weeks. Having just returned from nearly 2 weeks in Sardinia and Capri, for some reason, I haven't felt much like cooking, and quite truthfully, we weren't in the mood to eat so much of the rich food we gobbled up in Italy. I will make an attempt to cover Sardinia and Capri in another post, but a stroke of inspiration came last night and I wanted to share this unbelievably delicious meal that we grilled in an attempt to create a dinner to live up to our favourite bottle of wine; Alexander Valley Silver Oak Cabernet. Those of you who know me, know that I hoarde this stuff. But, last night felt like a cause for celebration, so we cracked that bad boy open and enjoyed the heck out of it. As for the ribeye, our butcher found an unbelievably well-marbled boneless slab of meat that I instantly fell for. The porcini dust made for an amazingly unctuous flavour that just melted in our mouths, and with our first 2 ears of corn from our garden (which were still a bit too young, but tasted FAB anyhow), I do believe we created a dish worthy of a little Silver Oak. Lasagne Bolognese – 2010

When I think of comfort food, one thing that instantly comes to mind is Lasagne. My Mother made an amazing Lasagne, and I always cherish my childhood memories surrounding it. My husband and I went to Italy to celebrate our 2nd anniversary, and I have warm memories tied to my first sampling of a lovely Lasagne Bolognese in Rome. I absolutely love Lasagne of all kinds, and there seem to be 11ty different variations on recipes out there. I recently purchased Jamie Oliver’s Food Revolution, and adapted the recipe in the book to fit what I had on hand, as well as to include fresh pasta. I prefer fresh pasta, but if time or material is not on your side, 8 ounces of dried egg lasagne sheets can work just as well. I hope that you do try to make some fresh pasta at some point, though. It’s something just so simple and rewarding, and the difference in quality is shocking. Continue Reading

Caramelized Pear and Gorgonzola Pizza

Nothing goes together quite like fruit and cheese. Apples and cheddar, grapes and brie, pear and gorgonzola . . . This pizza has been on my mind for years. When W and I started dating, one of our first (non)dates was to a local California Pizza Kitchen where we had their Pear and Gorgonzola Pizza. Over the years, they've taken this pizza off of the menu, so we had never returned to another CPK. So last night, during pizza night with the family, we decided to make our own attempt, and believe me when I say, I have no desire to ever go to another CPK again! There's just no need!
