Chicken, Bacon & Cannellini Bean Chowder

This week has been a bit of a bust in our household. I've been sick since last Tuesday/Wednesday, and just when I'm finally feeling a bit better, poor W has come down with the same icky cold that started my sinus infection and bronchitis. So, last night I was in a total comfort food mode and wanted to channel this Tiger vs. Dragon Soup from Aarti's (yes, the Food Network's Star's former blog, Aartilla the Fun that I made a few weeks ago). But, I wanted it to taste more homey and rich, so based it on a chicken and cannellini bean soup I had made in the past, with the addition of some bacon . . . and some creamed corn. The creamed corn gives it a delightfully sweet touch that contrasts nicely with the savory comforting richness of chicken paired with bacon. I'm feeling better now. But, I'll probably have to make a new batch to get W through his sickness. Bless his heart. <3 Continue Reading

Roasted Butternut Squash Lasagne with Cannelini Beans

My husband is Garfield. I don't mean to imply he really is a large orange cat famous for his affection for lasagne, but my husband does love lasagne. And he had a large orange cat when we met, so perhaps there may be something to that. We had a very busy day of cooking over W's birthday this weekend. One of our friends who was coming over to help celebrate is a vegetarian, so along with the homemade pizzas we were planning on baking, I wanted to try something a bit different. Something that was a departure from the bechamel, bolognese, and pasta that I'm used to. Something without any meat. The answer was found in a lovely roasted butternut squash filling that had an assortment of vegetables and cannelini beans. Fresh pasta is the key to this dish, so I highly recommend rolling out your own. It's well worth it, and so incredibly easy to do, you'll wonder why you haven't been doing it all along! Bean and Quinoa Chili (Chili Sin Carne)

I don’t know what it is with my desire to cook chili 11ty different ways this month, but this was another one of those “clean out the pantry” adventures that turned out much better than I expected it would. I’ve been on a quinoa kick again lately, so this was a very flavourful way to utilize it. Mexican Pork Carnitas Lasagna

If you're like me, you plan to cook for only 2 people, maybe 3 or 4, but end up with enough leftovers to feed an army. I'm constantly tossing out expired food, and when I have an opportunity to reuse leftovers without getting bored of eating the same thing for 3 consecutive nights, I grab it. This casserole was a great way to use up my leftover taco fixings from my Pork Carnitas Tacos, and the cheese from my Queso Fundido.
