I’m also not much of a coffee drinker, so this lemon almond biscotti is perfect paired with a sweeter green tea.
Ingredients:
- 2 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 4 large eggs
- 3/4 cups of sugar
- 1 Tbsp lemon zest
- 2 tsp lemon juice
- 1 cup sliced toasted almonds
Directions:
In a stand mixer, beat eggs and sugar together, then beat in lemon juice and zest. Add flour mixture to egg mixture and gradually mix together. Stir in the almonds.
On a floured surface, knead the dough for about 2 minutes. Divide dough in half and shape into 2 logs.
Bake for 30 minutes, or until golden brown. Remove biscotti from oven and cool completely.
Reduce oven temperature to 300F.
Slice the log into 1/2 inch slices, and put slices back on baking sheet. Bake for another 20 minutes.
Serve with tea or coffee and enjoy!
