Chicken thighs; they just always work. So versatile, and so delicious. Whether roasted or braised, grilled or fried, chicken thighs are a fantastic way to eat your chicken. I served this with Bean and Quinoa Chili and my husband and I really enjoyed it!
- 4 chicken thighs, skin on
- salt and pepper
- 4 Tbsp ground chipotle chili powder
- 4 Tbsp honey
- 1 tsp lemon zest
Preheat your oven to 375 degrees F.
Season both sides of the chicken thighs with salt and pepper and set aside in an oven safe baking pan.
Combine the honey, chipotle chili powder, and lemon zest in a separate bowl, and brush half of the mixture onto the chicken thighs.
Bake for 25 minutes. Remove the thighs from the oven, and brush the rest of the honey mixture and bake for an additional 20 minutes or until the juices run clear when pricked by a fork or knife.
Serve with a nice chili or a salad.
